Ingredients
  

Dough
  • 2 cups all-purpose flour plus extra for dusting
  • 1 teaspoon active dry yeast
  • 1 teaspoon salt
  • 3/4 cup warm water about 110°F
  • 1 tablespoon olive oil
Lemon Sauce
  • 1 cup lemon juice freshly squeezed
  • 1/4 cup olive oil
  • 1 teaspoon zest of lemon
  • 1 teaspoon honey optional for sweetness
  • 1 pinch salt
Toppings
  • 8 ounces fresh mozzarella cheese sliced
  • 2 cups arugula for topping
  • 1/4 cup parmesan cheese shaved
  • 1 tablespoon fresh basil chopped

Method
 

Prepare the Dough
  1. In a mixing bowl, combine warm water and yeast. Let it sit for 5 minutes until frothy.
  2. Add flour, salt, and olive oil to the yeast mixture. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5 minutes until smooth.
  4. Place the dough in a greased bowl, cover, and let it rise for 30 minutes.
Make the Lemon Sauce
  1. In a bowl, whisk together lemon juice, olive oil, lemon zest, honey, and salt until well combined.
Assemble the Pizza
  1. Preheat the oven to 475°F (245°C) with a pizza stone inside.
  2. Roll out the dough on a floured surface to your desired thickness.
  3. Transfer the rolled dough to a pizza peel or baking sheet.
  4. Spread the lemon sauce evenly over the dough.
  5. Top with mozzarella slices and bake for 10-12 minutes until the crust is golden.
Finish and Serve
  1. Remove the pizza from the oven and top with arugula, shaved parmesan, and basil.
  2. Slice and serve immediately while hot.

Notes
