Ingredients
  

Shrimp and Vegetables
  • 1 pound large shrimp peeled and deveined
  • 1 pound asparagus trimmed and cut into 2-inch pieces
  • 2 tablespoons olive oil divided
  • 4 cloves garlic minced
  • 1 lemon juice freshly squeezed
  • 1 teaspoon lemon zest freshly grated
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 tablespoon fresh parsley chopped, for garnish

Method
 

Prepare the Ingredients
  1. Rinse and pat dry the shrimp. Trim and cut the asparagus into 2-inch pieces.
  2. Mince the garlic and zest the lemon.
Cook the Asparagus
  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  2. Add the asparagus and sauté for about 3-4 minutes until tender-crisp.
Cook the Shrimp
  1. Push the asparagus to the side of the skillet and add the remaining tablespoon of olive oil.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the shrimp, lemon juice, lemon zest, salt, and pepper. Cook for about 3-4 minutes until the shrimp are pink and opaque.
Serve
  1. Remove from heat, garnish with fresh parsley, and serve immediately.
