Prepare the Ingredients
- Rinse and pat dry the shrimp. Trim and cut the asparagus into 2-inch pieces.
- Mince the garlic and zest the lemon.
Cook the Asparagus
- In a large skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the asparagus and sauté for about 3-4 minutes until tender-crisp.
Cook the Shrimp
- Push the asparagus to the side of the skillet and add the remaining tablespoon of olive oil.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the shrimp, lemon juice, lemon zest, salt, and pepper. Cook for about 3-4 minutes until the shrimp are pink and opaque.
Serve
- Remove from heat, garnish with fresh parsley, and serve immediately.
