Tender lasagna noodles rolled up with a savory filling of ground beef, creamy ricotta, and gooey mozzarella, all baked in marinara sauce.

Ingredients
  

  • 12 noodles lasagna cooked to package instructions
  • 16 oz ground beef 85% lean
  • 24 oz marinara sauce
  • 1/2 cup diced onion
  • 3 cloves garlic minced
  • 1 tsp sea salt or to taste for red sauce
  • 1/2 tsp black pepper or to taste
  • 1/2 tsp dried oregano
  • 15 oz ricotta cheese
  • 1 large egg
  • 1/4 cup parmesan cheese shredded
  • 3 cups mozzarella cheese shredded, divided
  • 1/4 cup parsley chopped, plus more to garnish

Method
 

  1. Preheat the oven to 375°F (190°C). Boil salted water and cook lasagna noodles until al dente. Drain and cool in cold water.
  2. In a deep pan, heat oil and brown ground beef. Add onion, garlic, salt, pepper, and oregano; sauté. Stir in marinara sauce and simmer. Spread half a cup of sauce in the casserole dish.
  3. In a bowl, mix ricotta, egg, parmesan, 1 ½ cups mozzarella, and parsley until smooth.
  4. Spread cheese mixture on each noodle, add meat sauce, and roll tightly. Place seam-side down in the dish.
  5. Spread remaining meat sauce on top and sprinkle with remaining mozzarella. Cover with foil.
  6. Bake covered for 40 minutes, then broil for 2-3 minutes until cheese is golden.
  7. Let cool slightly, garnish with parsley, and serve.
