Salad Base
  • 8 cups kale stems removed, chopped
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
Toppings
  • 1/2 cup dried cranberries
  • 1/2 cup walnuts chopped
  • 1 cup feta cheese crumbled
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced

Method
 

Prepare the Salad
  1. In a large bowl, combine the chopped kale, cherry tomatoes, and cucumber.
  2. Add the dried cranberries, chopped walnuts, and crumbled feta cheese on top.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, minced garlic, salt, and pepper until well combined.
Combine and Serve
