  • 1 cup sliced cucumbers
  • 1/2 cup sliced red onion
  • 1/2 cup sliced pepperoncini
  • 1 cup diced salami
  • 1 cup diced provolone cheese
  • 1/4 cup chopped fresh parsley
Dressing Ingredients
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Sandwich Ingredients
  • 4 slices Italian bread
  • 1 cup prepared salad mixture from Salad Ingredients

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the chopped romaine lettuce, cherry tomatoes, cucumbers, red onion, pepperoncini, salami, provolone cheese, and parsley.
  2. In a separate bowl, whisk together the olive oil, red wine vinegar, oregano, garlic powder, salt, and black pepper to create the dressing.
  3. Pour the dressing over the salad mixture and toss well to combine.
Assemble the Sandwich
  1. Take a slice of Italian bread and place a generous amount of the salad mixture on top.
  2. Top with another slice of bread to create a sandwich.
  3. Repeat for the remaining sandwiches.
  4. If desired, grill the sandwiches on a sandwich press or grill until golden brown and crispy.
