Prepare the Casserole
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the cooked chicken, spinach, artichoke hearts, cream cheese, Greek yogurt, half of the mozzarella cheese, garlic powder, onion powder, salt, and pepper.
- Mix until well combined and creamy.
- Transfer the mixture to a greased casserole dish and spread evenly.
Add Topping
- In a small bowl, mix the panko breadcrumbs, olive oil, and Parmesan cheese.
- Sprinkle the breadcrumb mixture evenly over the chicken and vegetable mixture in the casserole dish.
Bake
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the casserole is heated through.
- Remove from the oven and let it cool for a few minutes before serving.
