Ingredients
  

  • 410 g low-fat Greek yogurt
  • 400 g all-purpose flour
  • 2 tsp baking powder
  • 1 tsp Italian seasoning
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
  • 120 g pizza sauce 15g per pocket
  • 160 g low-fat cheese 20g per pocket

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the all-purpose flour with baking powder, Italian seasoning, garlic powder, and salt. Add in the low-fat Greek yogurt and mix until combined. Knead the dough for about 2-3 minutes until smooth and elastic.
  3. Divide the dough into 8 equal balls and roll them out into ovals about 6 inches long.
  4. On one half of each oval-shaped dough piece, spoon about 15g of pizza sauce followed by 20g of low-fat cheese. Leave a ½-inch border around the edges.
  5. Fold the other half of the dough over the filling and press down firmly on the edges with a fork to seal them shut.
  6. Place your sealed hot pockets onto a lined baking tray and bake for about 18-20 minutes or until golden brown.
  7. Remove from the oven and let them cool for about 5 minutes before serving.
