Ingredients
  

Vegetables
  • 2 medium zucchini diced
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 2 medium carrots diced
  • 1 can diced tomatoes 14.5 oz can
Protein
  • 1 lb Italian sausage casings removed
Liquids
  • 4 cups chicken broth low sodium
  • 1 cup water
Herbs and Spices
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
Garnish
  • 1 tbsp fresh parsley chopped

Method
 

Prepare the Ingredients
  1. Dice the zucchini, onion, and carrots. Mince the garlic.
  2. Remove the casings from the Italian sausage.
Cook the Sausage
  1. In a large pot, cook the Italian sausage over medium heat until browned, breaking it apart with a spoon.
Sauté the Vegetables
  1. Add the chopped onion, garlic, and carrots to the pot. Sauté for about 5 minutes until the onions are translucent.
Add Remaining Ingredients
  1. Stir in the diced zucchini, diced tomatoes, chicken broth, water, oregano, basil, salt, and pepper.
Simmer the Soup
  1. Bring the soup to a boil, then reduce the heat and let it simmer for 20 minutes, until the vegetables are tender.
Serve
  1. Ladle the soup into bowls and garnish with fresh parsley before serving.
