Healthy Ground Turkey Teriyaki Rice Bowl

Ingredients
  

  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1/4 cup water
  • 1 cup cooked brown rice or white rice
  • 1/2 cup carrots, shredded
  • 1/2 cup bell peppers, thinly sliced
  • 1/4 cup green onions, sliced
  • 1 tablespoon sesame seeds optional
  • Salt and pepper to taste

Method
 

  1. Heat olive oil in a large skillet or wok over medium heat. Add ground turkey and cook until browned, about 7-10 minutes.
  2. Add minced garlic and grated ginger to the skillet and sauté for 1-2 minutes until fragrant.
  3. In a small bowl, whisk together soy sauce, honey or maple syrup, rice vinegar, sesame oil, and water. Pour over turkey and simmer for 3-4 minutes.
  4. Prepare rice according to package instructions.
  5. Shred carrots and slice bell peppers. Chop green onions for garnish.
  6. Divide cooked rice between bowls, top with teriyaki turkey mixture, and garnish with carrots, bell peppers, green onions, and sesame seeds.
  7. Serve immediately while warm.
