Method
Prepare the Oven
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Mix Dry Ingredients
- In a large mixing bowl, combine the rolled oats, whole wheat flour, baking powder, ground ginger, ground cinnamon, ground nutmeg, and salt. Stir until well mixed.
Combine Wet Ingredients
- In another bowl, mix together the applesauce, honey, beaten egg, and vanilla extract until smooth.
Combine Mixtures
- Pour the wet mixture into the dry ingredients and stir until just combined. Fold in the chopped walnuts and raisins.
Shape Cookies
- Using a spoon or cookie scoop, drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake
- Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown.
Cool and Serve
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
