Ingredients
  

Meatballs
  • 1 lb Ground beef or lamb
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Dried oregano
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 large Egg beaten
  • 1/2 cup Breadcrumbs
Tzatziki Sauce
  • 1 cup Greek yogurt
  • 1 medium Cucumber grated and drained
  • 2 cloves Garlic minced
  • 1 tbsp Olive oil
  • 1 tbsp Lemon juice
  • 1 tsp Dried dill
  • 1/2 tsp Salt
Lemon Rice
  • 1 cup Long-grain rice
  • 2 cups Chicken broth or vegetable broth
  • 1 tbsp Lemon zest
  • 1 tbsp Lemon juice
  • 1 tbsp Olive oil
  • 1/2 tsp Salt
Cucumber Salad
  • 2 medium Cucumbers sliced
  • 1 cup Cherry tomatoes halved
  • 1/4 cup Red onion thinly sliced
  • 2 tbsp Olive oil
  • 1 tbsp Red wine vinegar
  • 1 tsp Dried oregano

Method
 

Prepare Meatballs
  1. Preheat the oven to 400°F (200°C). In a mixing bowl, combine ground beef, garlic powder, onion powder, oregano, salt, pepper, egg, and breadcrumbs. Mix until well combined.
  2. Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet.
  3. Bake in the preheated oven for 20-25 minutes until cooked through.
Make Tzatziki Sauce
  1. In a bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, dill, and salt. Mix well and refrigerate until ready to serve.
Cook Lemon Rice
  1. In a saucepan, heat olive oil over medium heat. Add rice and toast for 2-3 minutes.
  2. Add chicken broth, lemon zest, lemon juice, and salt. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until rice is tender.
Prepare Cucumber Salad
  1. In a large bowl, combine sliced cucumbers, cherry tomatoes, and red onion.
  2. Drizzle with olive oil and red wine vinegar, sprinkle with oregano and salt. Toss to combine.
Assemble Bowls
  1. In serving bowls, layer lemon rice, meatballs, cucumber salad, and a generous dollop of tzatziki sauce on top.
  2. Serve immediately and enjoy!
