Prepare Meatballs
- Preheat the oven to 400°F (200°C). In a mixing bowl, combine ground beef, garlic powder, onion powder, oregano, salt, pepper, egg, and breadcrumbs. Mix until well combined.
- Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet.
- Bake in the preheated oven for 20-25 minutes until cooked through.
Make Tzatziki Sauce
- In a bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, dill, and salt. Mix well and refrigerate until ready to serve.
Cook Lemon Rice
- In a saucepan, heat olive oil over medium heat. Add rice and toast for 2-3 minutes.
- Add chicken broth, lemon zest, lemon juice, and salt. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until rice is tender.
Prepare Cucumber Salad
- In a large bowl, combine sliced cucumbers, cherry tomatoes, and red onion.
- Drizzle with olive oil and red wine vinegar, sprinkle with oregano and salt. Toss to combine.
Assemble Bowls
- In serving bowls, layer lemon rice, meatballs, cucumber salad, and a generous dollop of tzatziki sauce on top.
