Ingredients
  

Meat
  • 2 pounds beef chuck cut into 1-inch cubes
Vegetables
  • 4 medium carrots peeled and sliced
  • 2 medium onions chopped
  • 3 stalks celery chopped
  • 2 cloves garlic minced
  • 2 pounds potatoes peeled and cubed
Liquids
  • 1 can Guinness stout or other dark beer
  • 4 cups beef broth
  • 2 tablespoons Worcestershire sauce
Seasonings
  • 1 teaspoon dried thyme
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 2 tablespoons olive oil for browning

Method
 

Prepare the Ingredients
  1. Chop all vegetables and cube the beef chuck.
  2. Season the beef with salt and pepper.
Brown the Beef
  1. In a large pot, heat olive oil over medium-high heat.
  2. Add the beef in batches and brown on all sides, about 5-7 minutes.
Sauté the Vegetables
  1. Remove the beef and set aside. In the same pot, add onions, carrots, celery, and garlic.
  2. Sauté until the onions are translucent, about 5 minutes.
Combine Ingredients
  1. Return the beef to the pot and add the potatoes, thyme, Worcestershire sauce, Guinness, and beef broth.
  2. Bring to a boil, then reduce heat to low.
Simmer the Stew
  1. Cover and simmer for 1.5 to 2 hours, until the beef is tender.
  2. Stir occasionally and add more broth if necessary.
Serve
  1. Taste and adjust seasoning if needed.
  2. Serve hot with crusty bread.
