Ingredients
  

Meat and Vegetables
  • 1 lb ground turkey lean
  • 4 medium potatoes diced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup bell pepper chopped
Seasonings
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
  • 1 tsp paprika
  • 1 tsp dried oregano
Liquid
  • 1 cup chicken broth low sodium
Oil
  • 2 tbsp olive oil for cooking

Method
 

Prepare the Ingredients
  1. Dice the potatoes, chop the onion, mince the garlic, and chop the bell pepper.
  2. In a large skillet, heat the olive oil over medium heat.
Cook the Turkey
  1. Add the ground turkey to the skillet and cook until browned, about 5-7 minutes.
  2. Stir in the chopped onion and garlic, cooking until the onion is translucent, about 3 minutes.
Add Vegetables and Seasonings
  1. Add the diced potatoes and bell pepper to the skillet.
  2. Season with salt, pepper, paprika, and oregano, stirring to combine.
Simmer
  1. Pour in the chicken broth and bring to a boil.
  2. Reduce heat to low, cover, and simmer until the potatoes are tender, about 20 minutes.
Serve
  1. Remove from heat and let sit for a few minutes before serving.
  2. Serve warm and enjoy your hearty skillet meal!
