Ground Chicken Taco Casserole

A hearty and flavorful casserole combining ground chicken, taco seasoning, and layers of cheese and tortillas, perfect for a family dinner.

Ingredients
  

Casserole Base
  • 1 lb ground chicken can substitute with ground turkey
  • 1 packet taco seasoning or homemade taco seasoning
  • 1 cup black beans canned, drained and rinsed
  • 1 cup corn canned or frozen
  • 1 cup salsa your favorite type
  • 4 tortillas corn tortillas cut into strips
  • 2 cups shredded cheese cheddar or Mexican blend
Toppings
  • 1 cup sour cream for serving
  • 1 cup chopped lettuce for serving
  • 1 medium tomato diced, for serving
  • 1/4 cup sliced olives for serving
  • 1/4 cup chopped cilantro for garnish

Method
 

Prepare the Chicken Mixture
  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground chicken until browned, about 5-7 minutes.
  3. Add the taco seasoning, black beans, corn, and salsa to the skillet. Stir well and cook for another 5 minutes.
Assemble the Casserole
  1. In a casserole dish, layer half of the tortilla strips on the bottom.
  2. Spread half of the chicken mixture over the tortillas, then sprinkle with half of the cheese.
  3. Repeat the layers with the remaining tortillas, chicken mixture, and cheese.
Bake the Casserole
  1. Cover the casserole dish with aluminum foil and bake for 20 minutes.
  2. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
Serve
  1. Remove from the oven and let cool for a few minutes before serving.
  2. Top with sour cream, lettuce, diced tomato, olives, and cilantro as desired.

Notes

This casserole can be made ahead of time and stored in the refrigerator before baking. Just add an extra 10-15 minutes to the baking time if baking from cold.
