Ingredients
  

Pizza Dough
  • 1 pound pizza dough store-bought or homemade
Roasted Garlic
  • 1 head garlic roasted
Spinach Topping
  • 4 cups fresh spinach washed and chopped
  • 1 tablespoon olive oil for sautéing
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Cheese Mixture
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese shredded
  • 1/2 cup feta cheese crumbled
  • 1 teaspoon dried oregano
Toppings
  • 1 tablespoon olive oil for drizzling
  • 1 tablespoon fresh parsley chopped, for garnish

Method
 

Prepare Roasted Garlic
  1. Preheat the oven to 400°F (200°C). Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
Sauté Spinach
  1. In a skillet, heat olive oil over medium heat. Add the chopped spinach, salt, and pepper. Sauté until wilted, about 3-4 minutes. Remove from heat.
Prepare Pizza Base
  1. Roll out the pizza dough on a floured surface to your desired thickness. Transfer to a baking sheet.
Assemble Pizza
  1. Spread the ricotta cheese evenly over the dough. Squeeze the roasted garlic cloves out of their skins and spread them over the ricotta. Top with sautéed spinach, mozzarella, and feta cheese. Sprinkle with oregano.
Bake Pizza
  1. Drizzle the assembled pizza with olive oil. Bake in the preheated oven for 15-20 minutes or until the crust is golden and the cheese is bubbly.
Serve
  1. Remove from the oven, garnish with fresh parsley, slice, and serve hot.
