Ingredients
  

Meatballs
  • 1 lb ground beef or ground lamb
  • 1/2 cup bread crumbs preferably whole wheat
  • 1 large egg beaten
  • 2 cloves garlic minced
  • 1 tbsp fresh parsley chopped
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
Orzo and Vegetables
  • 1 cup orzo pasta
  • 2 cups chicken broth low sodium
  • 1 cup cherry tomatoes halved
  • 1 cup spinach fresh
  • 1 tbsp olive oil
  • 1 tsp lemon juice freshly squeezed
  • 1 tsp feta cheese crumbled for topping

Method
 

Prepare the Meatballs
  1. In a mixing bowl, combine ground beef, bread crumbs, egg, garlic, parsley, oregano, salt, and pepper. Mix until well combined.
  2. Form the mixture into meatballs, about 1 inch in diameter.
Cook the Meatballs
  1. Heat olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes.
  2. Remove the meatballs from the skillet and set aside.
Cook the Orzo
  1. In the same skillet, add chicken broth and bring to a boil.
  2. Stir in the orzo and reduce heat to a simmer. Cook for about 10 minutes, stirring occasionally, until orzo is tender.
Combine and Serve
  1. Add the cherry tomatoes and spinach to the skillet, stirring until the spinach wilts.
  2. Return the meatballs to the skillet and drizzle with lemon juice. Cook for an additional 2-3 minutes until heated through.
  3. Serve topped with crumbled feta cheese.

Notes

Feel free to customize the vegetables based on your preference. This dish can also be made with ground turkey for a lighter option.
