Prepare the Meatballs
- In a mixing bowl, combine ground beef, bread crumbs, egg, garlic, parsley, oregano, salt, and pepper. Mix until well combined.
- Form the mixture into meatballs, about 1 inch in diameter.
Cook the Meatballs
- Heat olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes.
- Remove the meatballs from the skillet and set aside.
Cook the Orzo
- In the same skillet, add chicken broth and bring to a boil.
- Stir in the orzo and reduce heat to a simmer. Cook for about 10 minutes, stirring occasionally, until orzo is tender.
Combine and Serve
- Add the cherry tomatoes and spinach to the skillet, stirring until the spinach wilts.
- Return the meatballs to the skillet and drizzle with lemon juice. Cook for an additional 2-3 minutes until heated through.
- Serve topped with crumbled feta cheese.
