Ingredients
  

Chicken Meatballs
  • 1 lb ground chicken preferably lean
  • 1/2 cup breadcrumbs preferably whole wheat
  • 1/4 cup feta cheese crumbled
  • 1 large egg beaten
  • 2 cloves garlic minced
  • 1 tbsp fresh parsley chopped
  • 1 tbsp fresh oregano chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
Lemon Orzo
  • 1 cup orzo pasta
  • 2 cups chicken broth low sodium
  • 1 lemon juice and zest fresh
  • 1 tbsp olive oil
  • 1/4 cup fresh parsley chopped for garnish
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

Prepare the Meatballs
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine ground chicken, breadcrumbs, feta cheese, egg, garlic, parsley, oregano, salt, and pepper.
  3. Mix until just combined, then form into 1-inch meatballs.
  4. Place meatballs on a baking sheet lined with parchment paper.
  5. Bake for 20 minutes or until cooked through (internal temperature of 165°F).
Cook the Orzo
  1. In a pot, bring chicken broth to a boil.
  2. Add orzo, salt, and pepper, then reduce heat to a simmer.
  3. Cook for 8-10 minutes or until orzo is al dente.
  4. Stir in lemon juice, lemon zest, and olive oil.
Serve
  1. Divide the lemon orzo among plates.
  2. Top with baked chicken meatballs.
  3. Garnish with additional parsley if desired.
