Prepare the Meatballs
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine ground chicken, breadcrumbs, egg, oregano, garlic powder, salt, pepper, feta cheese, and parsley.
- Mix until well combined and form into 1-inch meatballs.
- Place meatballs on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until cooked through, reaching an internal temperature of 165°F (74°C).
Cook the Orzo
- In a pot, bring chicken broth to a boil.
- Add orzo and cook according to package instructions until al dente, about 8-10 minutes.
- Drain any excess liquid and return orzo to the pot.
- Stir in lemon juice, lemon zest, olive oil, dill, salt, and pepper.
Serve
- Divide the lemon orzo among plates.
- Top with baked chicken meatballs.
- Garnish with additional parsley if desired.
