Ingredients
  

Chicken Meatballs
  • 1 lb Ground Chicken Use lean ground chicken.
  • 1/2 cup Breadcrumbs Panko or regular.
  • 1 large Egg Beaten.
  • 1 tsp Dried Oregano For flavor.
  • 1 tsp Garlic Powder Or 2 cloves fresh garlic, minced.
  • 1/2 tsp Salt Adjust to taste.
  • 1/4 tsp Black Pepper Freshly ground.
  • 1/4 cup Feta Cheese Crumbled.
  • 2 tbsp Fresh Parsley Chopped.
Lemon Orzo
  • 1 cup Orzo Pasta Uncooked.
  • 2 cups Chicken Broth Low sodium preferred.
  • 1 large Lemon Juiced and zested.
  • 2 tbsp Olive Oil Extra virgin.
  • 1 tbsp Fresh Dill Chopped.
  • 1/2 tsp Salt Adjust to taste.
  • 1/4 tsp Black Pepper Freshly ground.

Method
 

Prepare the Meatballs
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine ground chicken, breadcrumbs, egg, oregano, garlic powder, salt, pepper, feta cheese, and parsley.
  3. Mix until well combined and form into 1-inch meatballs.
  4. Place meatballs on a baking sheet lined with parchment paper.
  5. Bake for 20-25 minutes or until cooked through, reaching an internal temperature of 165°F (74°C).
Cook the Orzo
  1. In a pot, bring chicken broth to a boil.
  2. Add orzo and cook according to package instructions until al dente, about 8-10 minutes.
  3. Drain any excess liquid and return orzo to the pot.
  4. Stir in lemon juice, lemon zest, olive oil, dill, salt, and pepper.
Serve
  1. Divide the lemon orzo among plates.
  2. Top with baked chicken meatballs.
  3. Garnish with additional parsley if desired.

Notes
