Ingredients
  

Chicken and Vegetables
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 2 cups chopped spinach fresh or frozen
  • 1 cup chopped bell peppers any color
  • 1 cup chopped onion yellow or red
  • 2 cloves garlic minced
Sauce and Toppings
  • 1 cup Greek yogurt plain
  • 1 cup feta cheese crumbled
  • 1 tbsp olive oil for sautéing
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste

Method
 

Prepare the Chicken and Vegetables
  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the chicken pieces, spinach, bell peppers, onion, and garlic.
Make the Sauce
  1. In a separate bowl, mix the Greek yogurt, olive oil, oregano, thyme, salt, and pepper until well combined.
Combine and Bake
  1. Pour the sauce over the chicken and vegetables, mixing well to coat everything evenly.
  2. Transfer the mixture to a greased casserole dish and spread it out evenly.
  3. Sprinkle the crumbled feta cheese on top.
  4. Cover with foil and bake for 30 minutes, then remove the foil and bake for an additional 15 minutes until the chicken is cooked through and the top is golden.
Serve
  1. Remove from the oven and let it cool for a few minutes before serving.
  2. Enjoy your Greek Chicken Casserole warm, garnished with fresh herbs if desired.
