Gingerbread Rice Krispie Treats

Ingredients
  

  • 6 cups Rice Krispies cereal
  • 10 oz mini vegan marshmallows (about 4 cups)
  • 4 tablespoons unsalted butter
  • 3 tablespoons molasses
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1 teaspoon vanilla extract optional

Method
 

  1. In a large pot over low heat, melt the unsalted butter. Once it's melted, add in the mini vegan marshmallows. Stir continuously until the marshmallows are completely melted and combined with the butter.
  2. Stir in the molasses, ground cinnamon, ground ginger, and ground cloves until everything is well combined. If you’re using vanilla extract, add it now.
  3. Remove your pot from heat and gently fold in the Rice Krispies cereal, coating each piece evenly with the marshmallow mixture.
  4. Prepare an 8x8 inch baking dish by lining it with parchment paper or lightly greasing it. Transfer your Rice Krispie mixture into the pan, pressing it down firmly to create an even layer.
  5. Allow your Gingerbread Rice Krispie Treats to cool at room temperature for about 15-20 minutes.
  6. Once set and cool enough to handle, lift the treats out of the pan and cut them into squares.
  7. Consider adding some festive decorations like melted dairy-free chocolate or colorful sprinkles.
