Garlic Shrimp Mofongo

Ingredients
  

For the Mofongo
  • 3 large green plantains peeled and cut into chunks
  • 4 cloves garlic minced
  • 1 cup chicken broth or vegetable broth
  • 1 tsp olive oil for frying
  • 1 tsp salt to taste
For the Garlic Shrimp
  • 1 lb shrimp peeled and deveined
  • 4 cloves garlic minced
  • 2 tbsp butter or olive oil
  • 1 tsp paprika
  • 1 tsp black pepper to taste
  • 1 tbsp fresh parsley chopped for garnish

Method
 

Prepare the Mofongo
  1. In a pot, bring salted water to a boil and add the plantain chunks. Cook for about 15 minutes until tender.
  2. Drain the plantains and let them cool slightly. In a mortar and pestle, mash the plantains with minced garlic and salt until smooth.
  3. Gradually add chicken broth until the mixture is creamy but still holds its shape. Form into balls or a mound.
Cook the Garlic Shrimp
  1. In a large skillet, melt the butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  2. Add the shrimp, paprika, and black pepper. Cook until shrimp are pink and opaque, about 5-7 minutes.
  3. Remove from heat and garnish with fresh parsley.
Serve
  1. Plate the mofongo and top with the garlic shrimp. Serve immediately.

Notes

For a spicier version, add a pinch of cayenne pepper to the shrimp.
