Prepare the Mofongo
- In a pot, bring salted water to a boil and add the plantain chunks. Cook for about 15 minutes until tender.
- Drain the plantains and let them cool slightly. In a mortar and pestle, mash the plantains with minced garlic and salt until smooth.
- Gradually add chicken broth until the mixture is creamy but still holds its shape. Form into balls or a mound.
Cook the Garlic Shrimp
- In a large skillet, melt the butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add the shrimp, paprika, and black pepper. Cook until shrimp are pink and opaque, about 5-7 minutes.
- Remove from heat and garnish with fresh parsley.
Serve
- Plate the mofongo and top with the garlic shrimp. Serve immediately.
