Chicken and Potatoes
  • 4 pieces chicken breasts boneless and skinless
  • 1 pound baby potatoes halved
  • 1 cup chicken broth
  • 1 cup Parmesan cheese grated
  • 1 tablespoon olive oil
  • 4 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Prepare the Ingredients
  1. In a large bowl, combine the chicken breasts, halved baby potatoes, minced garlic, olive oil, thyme, rosemary, salt, and pepper. Toss until everything is well coated.
  2. Place the mixture into the crockpot.
Add Broth and Cheese
  1. Pour the chicken broth over the chicken and potatoes in the crockpot.
  2. Sprinkle the grated Parmesan cheese on top.
Cook
  1. Cover the crockpot and cook on low for 4 hours or until the chicken is cooked through and the potatoes are tender.
Serve
  1. Once cooked, serve the chicken and potatoes warm, garnished with additional Parmesan cheese if desired.
