Ingredients
  

Fried Chicken
  • 1 lb boneless chicken thighs cut into strips
  • 1 cup buttermilk for marinating
  • 1 cup all-purpose flour for coating
  • 1 tbsp paprika for seasoning
  • 1 tbsp garlic powder for seasoning
  • 1 tbsp onion powder for seasoning
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
  • 2 cups vegetable oil for frying
Street Corn
  • 2 ears corn grilled and kernels removed
  • 1 cup mayonnaise for mixing
  • 1/2 cup cotija cheese crumbled
  • 1 tbsp lime juice freshly squeezed
  • 1 tsp chili powder for seasoning
  • 1/4 cup cilantro chopped
Jalapeño Lime Ranch
  • 1 cup ranch dressing store-bought or homemade
  • 1 jalapeño finely chopped seeds removed for less heat
  • 1 tbsp lime juice freshly squeezed
  • 1 tsp garlic powder
Taco Assembly
  • 8 small corn tortillas warmed
  • 1 cup shredded lettuce for topping
  • 1 medium lime cut into wedges for serving

Method
 

Prepare the Fried Chicken
  1. Marinate the chicken strips in buttermilk for at least 30 minutes.
  2. In a bowl, mix flour, paprika, garlic powder, onion powder, salt, and pepper.
  3. Heat vegetable oil in a frying pan over medium-high heat.
  4. Dredge marinated chicken in the flour mixture and fry until golden brown, about 5-7 minutes per side.
Prepare the Street Corn
  1. Grill the corn until charred, then remove kernels from the cob.
  2. In a bowl, combine corn, mayonnaise, cotija cheese, lime juice, chili powder, and cilantro.
Make the Jalapeño Lime Ranch
  1. In a mixing bowl, combine ranch dressing, chopped jalapeño, lime juice, and garlic powder.
  2. Mix well and set aside.
Assemble the Tacos
  1. Place fried chicken strips on warmed tortillas.
  2. Top with street corn mixture and drizzle with jalapeño lime ranch.
  3. Garnish with shredded lettuce and serve with lime wedges.
