  • 200 g ground pistachios plus extra for garnish
  • 3 large eggs room temperature
  • 150 g granulated sugar
  • 1 medium orange zested and juiced
  • 1/2 tsp baking powder optional for extra rise
  • 1/4 tsp salt
For Serving
  • 100 g whipped cream optional
  • few sprigs mint for garnish

Method
 

Prepare the Cake
  1. Preheat the oven to 180°C (350°F). Grease and line a 9-inch round cake pan with parchment paper.
  2. In a mixing bowl, whisk together the eggs and sugar until pale and fluffy.
  3. Add the orange zest and juice, and mix until combined.
  4. Fold in the ground pistachios, baking powder, and salt until just combined.
  5. Pour the batter into the prepared cake pan and smooth the top.
  6. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Serve the Cake
  1. Once cooled, slice the cake and serve with whipped cream and mint sprigs if desired.
