Prepare the Cake
- Preheat the oven to 180°C (350°F). Grease and line a 9-inch round cake pan with parchment paper.
- In a mixing bowl, whisk together the eggs and sugar until pale and fluffy.
- Add the orange zest and juice, and mix until combined.
- Fold in the ground pistachios, baking powder, and salt until just combined.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Serve the Cake
- Once cooled, slice the cake and serve with whipped cream and mint sprigs if desired.
