Butter Beans
  • 2 cups butter beans cooked or canned
Leeks
  • 2 leeks trimmed and sliced
Garlic
  • 3 cloves garlic minced
Vegetable Broth
  • 1 cup vegetable broth
Olive Oil
  • 2 tablespoons olive oil
Salt
  • 1 teaspoon salt to taste
Black Pepper
  • 1/2 teaspoon black pepper freshly ground
Fresh Parsley
  • 2 tablespoons fresh parsley chopped for garnish

Method
 

Prepare the Ingredients
  1. Rinse the butter beans under cold water if using canned. Trim and slice the leeks, and mince the garlic.
Sauté the Leeks and Garlic
  1. In a large pot, heat the olive oil over medium heat. Add the sliced leeks and sauté for about 5 minutes until softened. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
Combine Ingredients
  1. Add the butter beans and vegetable broth to the pot. Stir to combine, and season with salt and black pepper.
Simmer
  1. Bring the mixture to a gentle simmer. Cover and cook for about 20 minutes, allowing the flavors to meld.
Serve
  1. Remove from heat, garnish with chopped parsley, and serve warm as a side or light main dish.
