Ingredients
  

Fish
  • 1 lb white fish fillets such as tilapia or cod
  • 1 tbsp olive oil for grilling
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
Toppings
  • 1 cup cabbage shredded
  • 1 cup cherry tomatoes halved
  • 1 avocado sliced
  • 1/4 cup cilantro chopped
  • 1 lime juiced
Rice Base
  • 1 cup brown rice uncooked
  • 2 cups water

Method
 

Prepare the Rice
  1. In a saucepan, bring 2 cups of water to a boil. Add 1 cup of brown rice, reduce heat to low, cover, and simmer for 30-35 minutes until rice is tender.
Cook the Fish
  1. Preheat the grill to medium-high heat. In a bowl, mix olive oil, cumin, paprika, salt, and pepper. Coat the fish fillets with the mixture.
  2. Grill the fish for about 3-4 minutes on each side, or until cooked through and flaky.
Assemble the Bowls
  1. In each bowl, add a serving of brown rice as the base. Top with grilled fish, shredded cabbage, cherry tomatoes, avocado slices, and chopped cilantro.
  2. Drizzle with fresh lime juice before serving.
