Marinade
  • 1 cup buttermilk for marinating
  • 2 teaspoons hot sauce optional for heat

Coating
  • 1 cup all-purpose flour
  • 1 teaspoon paprika for color
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon baking powder for extra crispiness
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Oil
  • 2 tablespoons vegetable oil for drizzling

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine buttermilk, hot sauce, salt, and black pepper. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour, preferably overnight.
Prepare the Coating
  1. In a separate bowl, mix together flour, paprika, garlic powder, onion powder, thyme, baking powder, salt, and black pepper.
Preheat the Oven
  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
Coat the Chicken
  1. Remove the chicken from the marinade, allowing excess to drip off. Dredge each thigh in the flour mixture, pressing lightly to adhere. Place coated chicken on the prepared baking sheet.
Bake the Chicken
  1. Drizzle the vegetable oil over the coated chicken thighs. Bake in the preheated oven for 35-40 minutes, or until the chicken is golden brown and reaches an internal temperature of 165°F (74°C).
