Ingredients
  

Rice Base
  • 1 cup long-grain white rice uncooked
  • 2 cups water
Taco Filling
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning or homemade
  • 1 cup black beans canned, drained and rinsed
  • 1 cup corn canned or frozen
  • 1 cup salsa
Toppings
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup sour cream
  • 1 cup chopped lettuce
  • 1 cup diced tomatoes
  • 1 avocado sliced

Method
 

Cook the Rice
  1. In a medium saucepan, bring 2 cups of water to a boil. Add the rice, reduce heat to low, cover, and simmer for 15-20 minutes until rice is tender and water is absorbed.
Prepare the Taco Filling
  1. In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a wooden spoon, about 5-7 minutes.
  2. Stir in the taco seasoning, black beans, corn, and salsa. Cook for an additional 5 minutes until heated through.
Assemble the Bowls
  1. Divide the cooked rice among four bowls. Top each bowl with the taco filling and your choice of toppings such as cheese, sour cream, lettuce, tomatoes, and avocado.

Notes
