Cook the Rice
- In a medium saucepan, bring 2 cups of water to a boil. Add the rice, reduce heat to low, cover, and simmer for 15-20 minutes until rice is tender and water is absorbed.
Prepare the Taco Filling
- In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a wooden spoon, about 5-7 minutes.
- Stir in the taco seasoning, black beans, corn, and salsa. Cook for an additional 5 minutes until heated through.
Assemble the Bowls
- Divide the cooked rice among four bowls. Top each bowl with the taco filling and your choice of toppings such as cheese, sour cream, lettuce, tomatoes, and avocado.
