  • 2 cups cottage cheese preferably low-fat
  • 1/4 cup honey or maple syrup for sweetness
  • 1/4 cup fresh lemon juice about 2 lemons
  • 1 teaspoon lemon zest for added flavor
  • 1 teaspoon vanilla extract
Optional Toppings
  • 1/4 cup whipped cream for serving
  • 1 tablespoon fresh mint leaves for garnish
  • 1 tablespoon lemon slices for garnish

Method
 

Prepare the Mixture
  1. In a mixing bowl, combine the cottage cheese, honey, lemon juice, lemon zest, and vanilla extract.
  2. Using a whisk, blend the mixture until smooth and creamy.
Chill and Serve
  1. Spoon the mousse into serving cups and refrigerate for at least 30 minutes to set.
  2. Before serving, top with whipped cream, mint leaves, and lemon slices if desired.
