Prepare the Chicken and Rice
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine chicken pieces, rice, chicken broth, garlic powder, onion powder, oregano, salt, and pepper.
- Pour the mixture into a greased 9x13 inch baking dish.
Make the Tzatziki Sauce
- In a separate bowl, mix together Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, and salt until well combined.
Assemble and Bake
- Spread the tzatziki sauce evenly over the chicken and rice mixture in the baking dish.
- Top with crumbled feta cheese and halved cherry tomatoes.
- Cover with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the chicken is cooked through and the rice is tender.
- Garnish with fresh parsley before serving.
