Ingredients
  

Chicken and Rice Base
  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 cup uncooked long-grain rice
  • 2 cups chicken broth low-sodium preferred
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Tzatziki Sauce
  • 1 cup Greek yogurt plain
  • 1 medium cucumber grated and drained
  • 2 cloves garlic minced
  • 1 tablespoon fresh dill chopped
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
Toppings
  • 1 cup feta cheese crumbled
  • 1 cup cherry tomatoes halved
  • 1/4 cup fresh parsley chopped

Method
 

Prepare the Chicken and Rice
  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine chicken pieces, rice, chicken broth, garlic powder, onion powder, oregano, salt, and pepper.
  3. Pour the mixture into a greased 9x13 inch baking dish.
Make the Tzatziki Sauce
  1. In a separate bowl, mix together Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, and salt until well combined.
Assemble and Bake
  1. Spread the tzatziki sauce evenly over the chicken and rice mixture in the baking dish.
  2. Top with crumbled feta cheese and halved cherry tomatoes.
  3. Cover with foil and bake for 30 minutes.
  4. Remove the foil and bake for an additional 15 minutes, or until the chicken is cooked through and the rice is tender.
  5. Garnish with fresh parsley before serving.

Notes
