Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts
Coating
  • 1 cup dill pickle juice for marinating
  • 1 cup panko breadcrumbs
  • 1 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried dill
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Optional Garnish
  • 2 tablespoons fresh dill chopped, for garnish

Method
 

Marinate Chicken
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine the chicken breasts and dill pickle juice. Marinate for at least 30 minutes.
Prepare Coating
  1. In a separate bowl, mix together the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, dried dill, salt, and black pepper.
Coat Chicken
  1. Remove the chicken from the marinade and let excess juice drip off.
  2. Dredge each chicken breast in the breadcrumb mixture, pressing gently to adhere.
Bake Chicken
  1. Place the coated chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and the coating is golden brown.
Serve
  1. Garnish with fresh dill if desired and serve hot.
