Ingredients
  

Chicken
  • 2 cups cooked chicken breast shredded or diced
  • 1 cup buttermilk for marinating
  • 1 cup panko breadcrumbs for crunchiness
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Sandwich Assembly
  • 4 slices ciabatta bread or your choice of sandwich bread
  • 2 cups romaine lettuce chopped
  • 1/2 cup Caesar dressing store-bought or homemade
  • 1/4 cup Parmesan cheese grated
  • 1 cup tomato sliced

Method
 

Prepare Chicken
  1. In a mixing bowl, marinate the cooked chicken breast in buttermilk for at least 10 minutes.
  2. In another bowl, combine panko breadcrumbs, garlic powder, onion powder, salt, and black pepper.
  3. Coat the marinated chicken in the breadcrumb mixture until fully covered.
  4. Heat a frying pan over medium heat and add a little oil. Fry the coated chicken until golden and crispy, about 5-7 minutes per side.
Assemble Sandwich
  1. Toast the ciabatta bread slices until golden brown.
  2. Spread Caesar dressing on the bottom half of each toasted ciabatta slice.
  3. Layer the chopped romaine lettuce, crispy chicken, sliced tomatoes, and grated Parmesan cheese on top.
  4. Top with the other half of the ciabatta and press down gently. Cut in half and serve.
