Ingredients
  

Vegetables
  • 2 cups sweet potatoes peeled and diced
  • 1 cup onion chopped
  • 1 cup bell pepper chopped
  • 2 cloves garlic minced
Legumes
  • 2 cans black beans drained and rinsed
Liquids
  • 1 can diced tomatoes with juices
  • 2 cups vegetable broth
Spices
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Preparation
  1. Peel and dice the sweet potatoes, chop the onion and bell pepper, and mince the garlic.
  2. In the crock pot, combine the sweet potatoes, onion, bell pepper, garlic, black beans, diced tomatoes, and vegetable broth.
Cooking
  1. Add the chili powder, cumin, smoked paprika, salt, and black pepper to the crock pot.
  2. Stir all the ingredients together until well combined.
  3. Cover and cook on low for 8 hours or on high for 4 hours.
  4. Once cooked, stir well and adjust seasoning if necessary before serving.
