Spray the inside of your crock pot with non-stick cooking spray. Lay the chicken breasts in a single layer at the bottom.
Season the chicken with garlic powder, dried thyme, salt, and pepper.
In a medium bowl, combine cream of chicken soup, sour cream, and chicken broth. Stir until smooth.
Pour the creamy mixture over the seasoned chicken. Add frozen mixed vegetables on top.
Sprinkle the stuffing mix over the vegetables and press down gently.
Cover and cook on low for about 6 hours until the chicken is tender and shreddable.
Stir gently before serving and ladle into bowls.
