Ingredients
  

Gnocchi
  • 1 pound gnocchi store-bought or homemade
Vegetables
  • 4 cups fresh spinach washed and chopped
  • 2 cloves garlic minced
Dairy
  • 1 cup feta cheese crumbled
Oils and Seasonings
  • 3 tablespoons olive oil for frying
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1/2 teaspoon red pepper flakes optional

Method
 

Prepare the Gnocchi
  1. Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the surface. Drain and set aside.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
Cook the Gnocchi
  1. Add the cooked gnocchi to the skillet and fry until golden and crispy, about 5-7 minutes, stirring occasionally.
Add Spinach and Seasonings
  1. Add the minced garlic and spinach to the skillet. Cook until the spinach is wilted, about 2-3 minutes.
  2. Season with salt, black pepper, and red pepper flakes, if using. Toss well to combine.
Finish with Feta
  1. Remove from heat and sprinkle the crumbled feta cheese over the top. Serve immediately.
