Prepare the Gnocchi
- Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the surface. Drain and set aside.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
Cook the Gnocchi
- Add the cooked gnocchi to the skillet and fry until golden and crispy, about 5-7 minutes, stirring occasionally.
Add Spinach and Seasonings
- Add the minced garlic and spinach to the skillet. Cook until the spinach is wilted, about 2-3 minutes.
- Season with salt, black pepper, and red pepper flakes, if using. Toss well to combine.
Finish with Feta
- Remove from heat and sprinkle the crumbled feta cheese over the top. Serve immediately.
