Ingredients
  

Gnocchi
  • 1 pound potato gnocchi store-bought or homemade
Vegetables
  • 4 cups fresh spinach washed and chopped
  • 2 cloves garlic minced
Cheese
  • 1 cup feta cheese crumbled
Oils and Seasonings
  • 2 tablespoons olive oil for frying
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1/2 teaspoon red pepper flakes optional

Method
 

Prepare Gnocchi
  1. Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the surface. Drain and set aside.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the cooked gnocchi and sauté until golden and crispy, about 5-7 minutes. Remove from skillet and set aside.
Cook Spinach and Combine
  1. In the same skillet, add the remaining tablespoon of olive oil. Add minced garlic and sauté for about 30 seconds until fragrant.
  2. Add the chopped spinach, salt, black pepper, and red pepper flakes. Cook until the spinach is wilted, about 2-3 minutes.
  3. Return the crispy gnocchi to the skillet and toss to combine with the spinach. Remove from heat and stir in the crumbled feta cheese.
Serve
  1. Serve immediately, garnished with additional feta if desired.
