Prepare Gnocchi
- Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the surface. Drain and set aside.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the cooked gnocchi and sauté until golden and crispy, about 5-7 minutes. Remove from skillet and set aside.
Cook Spinach and Combine
- In the same skillet, add the remaining tablespoon of olive oil. Add minced garlic and sauté for about 30 seconds until fragrant.
- Add the chopped spinach, salt, black pepper, and red pepper flakes. Cook until the spinach is wilted, about 2-3 minutes.
- Return the crispy gnocchi to the skillet and toss to combine with the spinach. Remove from heat and stir in the crumbled feta cheese.
Serve
- Serve immediately, garnished with additional feta if desired.
