Prepare the Fish
- Soak the cod fillets in buttermilk for at least 15 minutes.
- In a mixing bowl, combine flour, cornstarch, paprika, garlic powder, salt, and black pepper.
Fry the Fish
- Heat oil in a deep fryer to 350°F (175°C).
- Remove cod from buttermilk, allowing excess to drip off, then dredge in the flour mixture.
- Carefully place the coated fillets in the hot oil and fry for about 4-5 minutes or until golden brown and crispy.
- Remove the fish from the oil and place on paper towels to drain excess oil.
Assemble the Sandwich
- Spread tartar sauce on the bottom half of each toasted bun.
- Place a crispy cod fillet on each bun, top with shredded lettuce, and cover with the top half of the bun.
- Serve with lemon wedges on the side.
