Ingredients
  

Crispy Cumin Lamb
  • 1 lb lamb shoulder cut into bite-sized pieces
  • 2 tbsp ground cumin
  • 1 tbsp paprika
  • 1 tsp salt
  • 1 tsp black pepper
  • 3 tbsp olive oil for frying
Brothy Rice
  • 1 cup basmati rice rinsed
  • 2 cups chicken broth or vegetable broth
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tsp salt
Garnish
  • 1/4 cup fresh cilantro chopped
  • 1 lemon cut into wedges

Method
 

Prepare the Lamb
  1. In a large bowl, combine lamb pieces with cumin, paprika, salt, and black pepper. Mix well to coat the lamb evenly.
  2. Heat olive oil in a large skillet over medium-high heat. Add the seasoned lamb and cook until crispy and browned, about 10-12 minutes. Remove from skillet and set aside.
Cook the Rice
  1. In the same skillet, add olive oil and sauté the chopped onion and garlic until translucent, about 3-4 minutes.
  2. Add the rinsed basmati rice and stir for 1-2 minutes. Pour in the chicken broth and add salt. Bring to a boil.
  3. Reduce heat to low, cover, and simmer for 15-20 minutes or until rice is tender and liquid is absorbed.
Serve
  1. Fluff the rice with a fork and serve it on plates. Top with the crispy cumin lamb.
  2. Garnish with chopped cilantro and lemon wedges. Enjoy your meal!

Notes
