Ingredients
  

  • 1 medium eggplant
  • 1 cup breadcrumbs (panko or regular)
  • ½ cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • to taste salt
  • to taste pepper
  • olive oil spray (or cooking spray of your choice)
  • grated Parmesan cheese (optional for topping)

Method
 

  1. Preheat your air fryer to 375°F (190°C) for about 5 minutes.
  2. Wash the eggplant, slice it into ½-inch thick rounds, sprinkle with salt, and let it rest for 15 minutes before patting dry.
  3. Set up a dredging station with shallow bowls for flour, beaten eggs, and breadcrumbs mixed with spices.
  4. Coat each eggplant slice in flour, then egg, and finally the breadcrumb mixture, pressing gently to ensure crumbs stick.
  5. Lightly spray both sides of each coated eggplant slice with olive oil.
  6. Arrange the slices in a single layer in the air fryer basket and cook for 15-20 minutes, turning halfway through.
  7. Serve warm, optionally topped with grated Parmesan cheese.
