Method
Cook the Chicken
- In a large skillet, heat olive oil over medium heat. Season the chicken pieces with salt and pepper. Add the chicken to the skillet and cook until browned and cooked through, about 7-10 minutes. Remove the chicken from the skillet and set aside.
Prepare the Sauce
- In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Pour in the chicken broth and bring to a simmer.
Combine Ingredients
- Add the orzo to the skillet and stir well. Cook for about 10 minutes, stirring occasionally, until the orzo is tender.
- Stir in the heavy cream, spinach, sun-dried tomatoes, and Italian seasoning. Cook for an additional 5 minutes until the sauce thickens.
- Return the cooked chicken to the skillet and mix well. Stir in the grated Parmesan cheese until melted and creamy.
Serve
- Serve hot, garnished with additional Parmesan cheese and fresh herbs if desired.
