Ingredients
  

Chicken and Orzo
  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 cup orzo pasta
  • 2 tablespoons olive oil for cooking chicken
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Creamy Sauce
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup chicken broth low sodium
  • 1 cup spinach fresh, chopped
  • 1 cup sun-dried tomatoes chopped
  • 1 cup Parmesan cheese grated
  • 1 teaspoon Italian seasoning

Method
 

Cook the Chicken
  1. In a large skillet, heat olive oil over medium heat. Season the chicken pieces with salt and pepper. Add the chicken to the skillet and cook until browned and cooked through, about 7-10 minutes. Remove the chicken from the skillet and set aside.
Prepare the Sauce
  1. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Pour in the chicken broth and bring to a simmer.
Combine Ingredients
  1. Add the orzo to the skillet and stir well. Cook for about 10 minutes, stirring occasionally, until the orzo is tender.
  2. Stir in the heavy cream, spinach, sun-dried tomatoes, and Italian seasoning. Cook for an additional 5 minutes until the sauce thickens.
  3. Return the cooked chicken to the skillet and mix well. Stir in the grated Parmesan cheese until melted and creamy.
Serve
  1. Serve hot, garnished with additional Parmesan cheese and fresh herbs if desired.
