Ingredients
  

Soup Base
  • 1 lb Italian sausage casings removed
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 4 cups chicken broth low sodium
  • 1 cup heavy cream
  • 1 cup Parmesan cheese grated
  • 1 cup ditalini pasta
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 2 cups fresh spinach chopped

Method
 

Prepare the Soup
  1. In a large pot over medium heat, add the Italian sausage and cook until browned, breaking it apart with a wooden spoon, about 5 minutes.
  2. Add the diced onion and minced garlic to the pot, cooking until the onion is translucent, about 3-4 minutes.
  3. Pour in the chicken broth and bring to a simmer.
  4. Stir in the heavy cream, grated Parmesan cheese, and Italian seasoning. Allow the soup to simmer for 10 minutes.
  5. Add the ditalini pasta and cook according to package instructions until al dente, about 8-10 minutes.
  6. Finally, stir in the chopped spinach and cook for an additional 2 minutes until wilted. Season with salt and pepper to taste.
