Ingredients
  

Pasta
  • 12 oz Pasta (e.g., spaghetti or penne)
Sauce
  • 8 oz Feta cheese, crumbled
  • 1 cup Heavy cream
  • 1 medium Lemon, zested and juiced
  • 2 cloves Garlic, minced
  • 2 tbsp Olive oil
  • 1 tsp Salt to taste
  • 1/2 tsp Black pepper to taste
  • 1/4 cup Fresh parsley, chopped for garnish

Method
 

Cook Pasta
  1. In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente.
  2. Reserve 1 cup of pasta water, then drain the pasta in a colander.
Prepare Sauce
  1. In a mixing bowl, combine the crumbled feta cheese, heavy cream, lemon zest, lemon juice, minced garlic, olive oil, salt, and black pepper. Whisk until smooth.
Combine and Serve
  1. In the same pot used for the pasta, return the drained pasta and add the feta sauce. Toss to combine, adding reserved pasta water as needed to reach desired creaminess.
  2. Serve immediately, garnished with chopped parsley.

Notes
