Ingredients
  

Pasta
  • 8 oz Fettuccine or any pasta of choice
Chicken
  • 2 cups Cooked chicken breast diced
Sauce
  • 1 tbsp Olive oil
  • 1 cup Heavy cream
  • 1 cup Chicken broth
  • 2 tbsp Cajun seasoning adjust to taste
  • 1 cup Parmesan cheese grated
  • 1 cup Bell pepper sliced
  • 1 cup Onion sliced
  • 2 cloves Garlic minced
Garnish
  • 2 tbsp Fresh parsley chopped

Method
 

Cook the Pasta
  1. In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside.
Prepare the Sauce
  1. In a skillet, heat olive oil over medium heat. Add the sliced bell pepper and onion, sautéing until softened, about 5 minutes.
  2. Add minced garlic and cook for an additional minute until fragrant.
  3. Stir in the Cajun seasoning, chicken broth, and heavy cream. Bring to a simmer and let it cook for 5 minutes, stirring occasionally.
  4. Add the cooked chicken and Parmesan cheese, stirring until the cheese is melted and the sauce is creamy.
Combine and Serve
  1. Add the cooked pasta to the sauce, tossing to coat evenly. Cook for an additional 2 minutes to heat through.
  2. Serve hot, garnished with fresh parsley.

Notes
