Ingredients
  

Muffin Batter
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk or milk with vinegar
  • 1/2 cup unsalted butter melted
  • 2 large eggs
  • 1 tablespoon orange zest
  • 1 cup fresh cranberries or frozen
Streusel Topping
  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/4 cup unsalted butter cold and cubed
  • 1/2 teaspoon cinnamon

Method
 

Prepare the Muffin Batter
  1. Preheat the oven to 375°F (190°C) and grease a muffin tin.
  2. In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix buttermilk, melted butter, eggs, and orange zest until combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in cranberries.
Make the Streusel Topping
  1. In a small bowl, combine flour, brown sugar, cold butter, and cinnamon.
  2. Use a fork or your fingers to mix until crumbly.
Bake the Muffins
  1. Divide the muffin batter evenly into the prepared muffin tin.
  2. Sprinkle the streusel topping over each muffin.
  3. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  4. Let cool in the tin for 5 minutes before transferring to a wire rack.
