Ingredients
  

  • 6 large eggs
  • 1 cup cottage cheese
  • ½ cup shredded cheese cheddar, mozzarella, or Swiss
  • ¼ cup milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ½ cup finely chopped vegetables bell peppers, spinach, mushrooms
  • ½ cup cooked turkey bacon or chicken sausage optional

Method
 

  1. Preheat the oven to 325°F (163°C).
  2. Grease your muffin tin or use a silicone muffin tray.
  3. Blend the eggs, cottage cheese, shredded cheese, milk, salt, black pepper, garlic powder, and onion powder until smooth.
  4. Stir in finely chopped vegetables and optional proteins.
  5. Divide the egg mixture evenly into the prepared muffin cups, filling each about three-quarters full.
  6. Bake for 20-25 minutes until set and golden on top.
  7. Let them cool for about 5 minutes before removing from the tin.
