Ingredients
  

Vegetables
  • 2 cups fresh spinach chopped
  • 1 small onion finely chopped
  • 1 clove garlic minced
Dairy
  • 1 cup cottage cheese low-fat or regular
  • 3 large eggs
  • 1 cup milk can use almond or soy milk for a dairy-free option
  • 1 cup shredded cheese cheddar or mozzarella
Seasonings
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano

Method
 

Prepare the Oven and Vegetables
  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté the chopped onion and minced garlic until the onion is translucent.
  3. Add the chopped spinach and cook until wilted, about 2-3 minutes.
Mix the Ingredients
  1. In a mixing bowl, whisk together the eggs, cottage cheese, milk, salt, pepper, and oregano until well combined.
  2. Stir in the sautéed vegetables and shredded cheese.
Bake the Quiche
  1. Pour the mixture into a greased 9-inch pie dish.
  2. Bake in the preheated oven for 30-35 minutes, or until the quiche is set and lightly golden on top.
  3. Allow to cool for a few minutes before slicing and serving.
