Ingredients
  

  • 1 can organic black beans drained and rinsed
  • 2 cups corn kernels fresh or frozen
  • 1 red bell pepper diced
  • 1 jalapeno finely diced
  • 1/4 cup red onion finely diced
  • 1/2 cup fresh cilantro chopped
  • 2 tbsp fresh lime juice
  • 1/2 tsp salt
  • fresh black pepper to taste

Method
 

  1. Gather all the ingredients you'll need for this salad.
  2. Open the can of organic black beans and drain them well. Rinse under cold water.
  3. Dice the red bell pepper, jalapeno, and red onion.
  4. In a large mixing bowl, combine the black beans, corn, diced bell pepper, jalapeno, red onion, and cilantro.
  5. Add the lime juice, salt, and black pepper to the bowl.
  6. Gently mix all the ingredients together without mashing the beans.
  7. Taste and adjust seasoning as needed before serving.
