Classic Christmas Toffee

Ingredients
  

Toffee Base
  • 1 cup unsalted butter cut into pieces
  • 1 cup granulated sugar
  • 1/4 cup light corn syrup
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
Topping
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup chopped nuts such as pecans or almonds

Method
 

Prepare the Baking Sheet
  1. Line a baking sheet with parchment paper and set aside.
Cook the Toffee
  1. In a heavy-bottomed saucepan, combine butter, sugar, corn syrup, and salt. Cook over medium heat, stirring constantly until the mixture reaches a boil.
  2. Continue to cook without stirring until the mixture reaches 300°F (hard crack stage) on a candy thermometer.
  3. Remove from heat and stir in vanilla extract.
Pour and Cool
  1. Quickly pour the toffee onto the prepared baking sheet, spreading it evenly.
  2. Let it cool for about 5 minutes.
Add Toppings
  1. Sprinkle chocolate chips over the warm toffee and let sit for a few minutes until melted.
  2. Spread the melted chocolate evenly and sprinkle with chopped nuts.
  3. Allow to cool completely until set, about 1 hour.
Break and Serve
  1. Once set, break the toffee into pieces and serve or package for gifting.
