Ingredients
  

Marinade Ingredients
  • 1/4 cup Dijon mustard
  • 1/4 cup olive oil extra virgin
  • 1/4 cup fresh orange juice about 1 orange
  • 2 tablespoons fresh lemon juice about 1 lemon
  • 2 cloves garlic minced
  • 1 teaspoon honey optional for sweetness
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon fresh thyme or 1/2 teaspoon dried thyme
Chicken
  • 4 pieces boneless chicken breasts about 6 oz each

Method
 

Prepare the Marinade
  1. In a mixing bowl, whisk together the Dijon mustard, olive oil, orange juice, lemon juice, minced garlic, honey, salt, black pepper, and thyme until well combined.
  2. Taste and adjust seasoning if necessary.
Marinate the Chicken
  1. Place the chicken breasts in a resealable plastic bag or shallow dish.
  2. Pour the marinade over the chicken, ensuring it is well coated.
  3. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to 4 hours for more flavor.
Grill the Chicken
  1. Preheat the grill to medium-high heat.
  2. Remove the chicken from the marinade and discard the marinade.
  3. Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  4. Let the chicken rest for a few minutes before slicing and serving.
