Ingredients
  

Protein
  • 1 lb chicken breast boneless, skinless
Vegetables
  • 2 medium sweet potatoes peeled and cubed
  • 1 cup broccoli florets fresh or frozen
  • 1 red bell pepper sliced
Seasonings
  • 2 tablespoons olive oil for roasting
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Toppings
  • 1 avocado sliced
  • 1/4 cup feta cheese crumbled
  • 2 tablespoons fresh cilantro chopped

Method
 

Prepare the Chicken
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, toss the chicken breast with 1 tablespoon of olive oil, garlic powder, paprika, salt, and pepper.
Roast the Sweet Potatoes
  1. On a baking sheet, spread the cubed sweet potatoes and drizzle with 1 tablespoon of olive oil, salt, and pepper.
  2. Roast in the preheated oven for about 25 minutes or until tender, stirring halfway through.
Cook the Chicken
  1. While the sweet potatoes are roasting, heat a skillet over medium heat and cook the seasoned chicken for about 6-7 minutes on each side or until fully cooked.
Sauté the Vegetables
  1. In the same skillet, add the broccoli and bell pepper, sautéing for about 5 minutes until tender.
Assemble the Bowl
  1. In bowls, layer the roasted sweet potatoes, sautéed vegetables, and sliced chicken.
  2. Top with sliced avocado, crumbled feta cheese, and chopped cilantro.
